Pumpkin Seeds

Pumpkins are more than just a Halloween decoration, they're actually very nutritious. When carving pumpkins save the seeds and bake them into a delicious snack. Pumpkin seeds are a good source of vitamin K and minerals such as magnesium, iron, and copper that make you feel energized and help to improve your complexion.

What You'll Need:

  • Fresh pumpkin seeds
  • Spices - Some suggestions: garlic salt, Parmesan cheese, smoked paprika, salt & pepper, or cinnamon sugar - depending on if you want spicy or sweet pumpkin seeds!
  • Mixing bowl
  • Foil
  • Cookie sheet

 

Remove the guts from the pumpkin, separate the seeds from the stringy pulp and rinse well in a strainer so they are clean and air dry. In a mixing bowl combine the pumpkin seeds, olive oil, and spices of your choice. Place a single layer of seeds on a greased and foil-wrapped cookie sheet. Bake at 300 °F for 45-50 minutes. Let cool, then eat and enjoy! Can be stored for up to one week in an air-tight container... If they last that long!
